What I saw for most of the game was #27 man on man with Davis with a safety over the top. Therefore, the box could not have been "stacked"

Well, if theyre playing man on the outside WR's with a safety over the top, that leaves 8 in the box. The LB/DB covering the guy(s) in the slot(s) are considered "in the box" regardless of who they are covering and what position they play.

the box actually spans the offensive line in width.
