Think it is just a matter of preference.  Like salt in bread.  Some parts of Italy use it, some don't.  You can definitely taste the difference and I saw people add salt to the bread in areas where they don't use it.

Yeah and throw Panera in this convo too. It doesn't slice the roof of your mouth up like Publix but you could **** some up with a piece of it.
