Football

In 2010, throughout seven home football games held at the Papa John’s Cardinal Stadium, Louisville received $785,000.00 in concession revenue.

This dollar amount represents Louisville’s 30 percent split with its concessionaire, Centerplate. Thus, in seven home football games, Louisville sold $2,616,666.66 worth of concessions, or on average, $373,809.52 worth of hot dogs, peanuts, beer and other concessions during each game. Louisville does not breakdown what dollar amount of sales is attributed to a particular item, such as hot dogs, pizza or beer.

The question would be is that 30% or gross sales or 30% of the net profit?

O-kay...Then tell me what is in Louisville's contract with their concessionaire. Is it 30% or gross sales or 30% of the net revenue? Anyone with any real world business experience at all knows the difference between the two is significant and why.

Aramark runs the concessions at the baseball stadium and the Sun Dome. Pretty sure they run the whole campus. Don't know what the percentage USF receives, if any. They may get paid a set fee by Aramark to let them run the concessions.

Aramark is a for profit company and does not work for a set fee. The last thing Aramark wants is for their client to see the internal figures regarding food cost, labor and net profit they are making.

It isn't at all difficult to figure out those numbers. Food costs and labor costs are the same, no matter who is running concessions.

Not really...good management can run better numbers, but all this seems to be too complicated for Academia anyway.

With all your great wisdom of the burger and fries industry, please tell us why most sports venues and business contract out their food service needs rather than reaping all the profits themselves?

Most sports venues do not. Those that do is because of sheer stupidity.

A quick list of a lot of those that don't contract out shouldn't be a problem then ...?
