If I understand the way the company operates correctly, USF doesn't own the restaurants, they just own the space that the restaurants sit in. If I understand the way the company operates correctly, USF doesn't own the restaurants, they just own the space that the restaurants sit in. This is correct. USF doesn't own any of the on campus stores. Instead of dealing with individual stores, "middle-men" companies, such as Aramark, win bids to operate and manage stores within the campus area. Each of these companies has a list of restaurant franchises that they are able to offer the universities. The universities in turn, don't have to deal with the daily operation responsibilities of operating numerous stores on campus and instead just get a percentage of sale revenues.
