Are there any college stadiums out there, with coach statues, of coaches who have NOT won a national championship?

The only statues I know of, are Bear Bryant(Bama), Bobby Bowden(FSU), & Lou Holtz(ND).

Huh?

Penn State has a statue of Joe Paterno outside their stadium.

It has been a few years since I have been to ND's stadium, but all I remember is a statue of Ara Parseghian and possibly Knute Rockne.  I think Lou Holtz is a new addition.
