As I said in another post, I think Esports may be the way for us to go.  A few other options already in the college arena:

   Bass Fishing

   Cornhole

   Qudditch

   Medieval Combat Arts

   Women's Wrestling

I think with USF's demographics these could strike a perfect balance between the nerds and the redneck constituency.
