If you are a fan of Chicken Wings and brats, they have a Buffalo Chicken Brat that is actually made of chicken and Buffalo sauce. They are ridiculously good on a bun w/ ranch or blue cheese dressing. Mix'em together.Rub your butts with olive oil and then the dry rub mixture.Wrap them air tight in saran wrap and put'em in the fridge over night.On Friday at 6pm put'em in the smoker with hickory chunks. Smoke'em low and slow for 15-16 hrs.Finishing sauce.Mix your favorite hickory flavor bbq sauce with a little lemon juice and balsamic vinegar, bring it barely to a boil.When I pull the pork I remove all the fat that I can. Mix the pork and just enough finishing sauce to keep it moist.BULLBQ SAUCE:Again, your favorite Hickory flavor bbq sauce - one bottle Chipotle flavored hot sauce - one bottle Texas Pete hot sauce - one bottle a little garlic juice.Mix in a container that will hold it all!
