I've had some fantastic barbecued raccoon WV-style. It tastes like pulled pork.

Other than that, any kind of wild game, or cowboy stew, would be good. Venison, random pork sausage, etc, all mixed together.

I think this pepperoni roll idea sounds quite intriguing. I've never had them... But I do love me some pepperoni.
