Maybe for SK he would rather be at that level. Get a chance to help young men get their head screwed on properly so they will be more level headed as they rise through the ranks?? SK has been through the whole gambit, high school-college-pro he has a lot of wisdom and he is a good man. Not a bad role model to have your teenage kid around.

Maybe the stress of being at USF got to him and he became a Foodie/a Gourmand. Nice terms instead of plump, robust, chunky. He probably just likes and appreciates good food??

I'm with you there are plenty of good coaches that weren't great players

USF athletes do have a great meal plan, probably coaches do too.
