Ryan, I have a personal tradition of drinking a craft beer from the town of the the first game team. So far I have not been able to find one from Madison or a brewer called Badger Beer. If you have time to pick up a six pack of a good IPA I'll find you and pay you for it.

Now that I have read the rest of the thread I'll share with @puc86.

Like your menu.  We've been doing the themed tailgates for quite a while, 7 - 9 years probably.  We may be going to the Iron Bull tailgate for Wisconsin so not planning.  But if we don't go to that one it just might be a trip to Culvers on the way to Ray Jay.

Don't think brisket and were planning some other BBQ for SCState.  SMU would be beef.  BYU will be an issue. Last Temple game we picked up a catering set up from Philly Phlava.  They import Amoroso rolls and are pretty close to Philly steaks.  Chili for sure for Cinci. More BBQ for Memphis.

When I just read your list to my wife she said maybe Bison Burgers for BYU.  Are there bison out there?

Yes, there are bison in Utah.

So, I did a quick internet search and it seams that wild game (which would include bison) chili and something called funeral potatoes are popular in Utah.  If you want traditional SC BBQ, it should be mustard based.

Thanks to those who have schooled me on SC bbq. Will switch it to pulled pork. 

And on the Utah thing, I could do some buffalo. ( I did that on purpose) . It will remain a Buffalo until all people who have known them as such are dead. Then it can be a bison. And when GREAT WHITE BUFFALO sand Charles Bronson say so.
