I've always wanted the stadium to be in the shape of the USF "U", so when they do the aerial shots of the stadium you can see the U and know right away its USF.

Metal benches are the way to go though, just look at UF and FSU. You can cram more people in that way. I do love the design of Minnesota's stadium though.
